Easy as 1-2-3 Chicken and Rice Casserole

Here is a great and easy chicken dish, perfect for those chilly nights that are closing in around us. Believe it or not, this takes around 2 minutes to prepare. Easy peasy, nice and easy…

Costing less than £5 for four people and taking just a few minutes of your time, it will bring rave reviews from your friends and family, I promise!

Preheat oven to 200 C.


  • 4 medium sized chicken thigh portions
  • 1 can of cream of chicken soup (condensed)
  • 1 packet of dry French Onion Soup (such as Knorr)
  • 350 g parboiled long grain rice
  • 750 ml water


1. Spread the rice evenly in a medium sized dish and place the chicken portions on top.

2. In a bowl or large measuring jug mix together the condensed chicken soup with the water and pour over chicken and rice.

3. Sprinkle chicken with onion soup mix.

4. Cover with foil and bake for approximately 1hour and 15 minutes

Delicious served with salad, or we are LOVING the vegetable steam bags you pop in the microwave! Also yummy with broccoli, too.


-Add a clove of chopped garlic or a teaspoon of garlic powder to the condensed soup and water.

-Substitute all or part of the water for white wine.

-Substitute condensed mushroom soup for chicken soup.

-Add a teaspoon of tarragon to give the recipe a bit more zing!
