Alyssa's Meatloaf

MeatloafGrowing up in Canada, one of the 'mainstays' of our family meals was meatloaf...surprisingly something that you don't seem to find much in the UK, although there are loose similarities with Shepherd's and Cottage Pie using mince.

As the nights draw in, with wind and rain in full swing, it is always nice to know that dinner is going to be true comfort food. One of my favourite things about meatloaf is the leftovers! They make a DELICIOUS sandwich. I like mine with mayo, a good chutney and a bit of lettuce.

Hopefully this recipe will tickle your taste buds and will become a family favourite at your home, too.

Meatloaf

Serves 6

Preparation time: 15 mins. Cooking time: 60 mins.

 Ingredients:

For meatloaf:

  • 900 g beef mince
  • 1 medium onion, finely chopped
  • 3 tbsp ketchup
  • 2 large eggs
  • 1 slice white bread, torn into pieces
  • 1 tsp salt
  • 2 tsp soy sauce
  • 1-2 garlic cloves, crushed 

For glaze:

  • 5 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 2 tsp light brown sugar 

Method:

Preheat the oven to 180°C.

1) In a small bowl, whisk together all the glaze ingredients and set aside.

2) In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a loaf tin. Bake for 30 minutes. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for a further 30 minutes.

3) Remove from the oven and let stand for 5 minutes. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.

Delicious served with gravy (I am loving the pre-made kind from the supermarket) and mashed potatoes with steamed vegetables (done in the microwave).
